2-Methylbutyraldehyde (isovaleraldehyde) is a branched aliphatic aldehyde functioning as a fragrance and flavoring ingredient. It occurs naturally in many foods including chocolate, coffee, and citrus fruits. It is not listed in EU Annexes II or III. The compound has been assessed by FEMA/GRAS and IFRA as safe for use in food and fragrance applications at low concentrations. Its small molecular size and high volatility limit skin penetration, and it is rapidly metabolized by aldehyde dehydrogenases in the skin and liver.
