Aureobasidium pullulans/Rice Bran Ferment is the product of fermenting rice bran with Aureobasidium pullulans, a polymorphic fungus commonly found on plant leaves and in soil. A. pullulans is notable for producing pullulan, a linear maltotriose polymer linked by alpha-1,4 and alpha-1,6 glycosidic bonds that forms a viscous, adherent film. During fermentation of rice bran, the fungus secretes enzymes (amylases, proteases, phytases) that biotransform the bran components into smaller bioactive molecules including ferulic acid, phytic acid derivatives, gamma-oryzanol, and B vitamins. The resulting ferment filtrate combines the film-forming pullulan polysaccharides with the antioxidant and brightening small molecules generated from the rice bran matrix. The fermentation process also improves bioavailability and reduces antinutrient content.
