Cinnamomum cassia bark water is the aqueous steam-distillate of Chinese cinnamon bark, capturing water-soluble volatile components including cinnamaldehyde (the primary aroma compound), coumarin derivatives, and cinnamic acid. The distillate retains antimicrobial and antioxidant properties of the bark while being depleted of many oil-phase constituents. However, cinnamaldehyde remains a potent skin sensitizer even at low concentrations and is listed as a fragrance allergen under EU regulation. Use at very low concentrations is typical and reduces risk.
