Aliphatic nitriles can undergo metabolic hydrolysis to release cyanide, a class-level toxicology concern documented for several aliphatic nitriles of various chain lengths. Long-chain examples generally have lower acute toxicity than short-chain nitriles (like acetonitrile or butyronitrile) because of slower absorption and metabolism, but the class hazard is why nitriles as fragrance materials are used sparingly and subject to RIFM/IFRA scrutiny.
