Dodecyl gallate (CAS 1166-52-5), also known as lauryl gallate or E312, is the dodecyl ester of gallic acid. It is a lipophilic antioxidant widely used to prevent oxidative rancidity in fats and oils in both food and cosmetic applications, typically at 0.01-0.1%. EFSA has established an ADI and the compound has decades of food-use safety data. In cosmetics, it is recognized as a contact sensitizer with documented cases of allergic contact dermatitis — particularly in leave-on products and at higher concentrations. Not classified as carcinogenic or mutagenic; no GHS category 1 hazards at typical use levels.
