Hexyldihydrofuranone (also known as gamma-undecalactone or 5-hexyloxolan-2-one) is a gamma-lactone with a six-carbon alkyl chain imparting peach-fruity-coconut odor notes. Gamma-undecalactone is one of the most widely used lactone fragrance materials and is found naturally in many fruits. Under EU Regulation (EC) No 1223/2009, it is not listed in Annex II (banned) or Annex III (restricted substances). The compound has FEMA GRAS status for food flavoring and a long history of safe use in cosmetics. The larger lactone ring size compared to 5-methylfuranone provides greater chemical stability.
