Hydroxymethylfurfural (HMF) is formed during the Maillard reaction and caramelization of sugars. It carries H315/H319/H335 (irritation) and H412 (aquatic toxicity with long-lasting effects) classifications. HMF is found naturally in many foods and is considered of low acute toxicity, but its presence in cosmetics (particularly those with sugar-derived ingredients) should be monitored. EU regulation 1223/2009 does not list specific restrictions for HMF but the compound is on ECHA's substance of concern registry.
