About
Thaumatin — the GRAS-approved sweet protein from the katemfe fruit; used in oral-care/flavor applications.
Thaumatins are a group of intensely sweet-tasting proteins isolated from the arils of the West African katemfe fruit (Thaumatococcus daniellii). They are GRAS-approved food ingredients (FDA 21 CFR 172) and authorized EU food additive E957. In cosmetic/personal-care contexts they appear primarily in oral-care products and flavored lip balms for a sweet flavor. Proteins are generally non-irritating topically; the main theoretical risk is allergenicity, typical of any protein ingredient, but thaumatin has an extensive food-safety record. Classification here as 'fragrance' likely reflects its flavor role; it is not a traditional fragrance molecule.
