Tapioca Starch Crosspolymer is a modified tapioca starch produced by crosslinking tapioca starch with epichlorohydrin, creating a polymer with improved stability, oil-absorption capacity, and sensory properties compared to native starch. Epichlorohydrin (CAS 106-89-8) is used in the crosslinking reaction but residual levels in the finished ingredient are typically extremely low due to the reaction process and EU manufacturing standards.
