About

The formate ester of n-hexanol giving fresh green-fruity notes. FEMA GRAS; formate esters hydrolyze to formic acid so use-level awareness applies.

Hexyl formate (CAS 629-33-4) is the formate ester of n-hexanol, used in flavor (FEMA GRAS) and fragrance for fresh, green, fruity notes reminiscent of plum and apple. Formate esters have lower hydrolytic stability than acetates and gradually release n-hexanol (well-tolerated) and formic acid (mild irritant at meaningful concentrations). At normal fragrance use levels this is not practically problematic, but the prior database score of 100 was unwarranted given normal ester hydrolysis behavior. Not a classified sensitizer; not an EU Annex III declared allergen.
