Trimethylpyrazine (CAS 14667-55-1) is a naturally occurring pyrazine formed during thermal Maillard-type processes; it is abundant in roasted coffee, cocoa, and cooked meats. Regulatory bodies have evaluated it as a flavoring: FEMA GRAS listing covers oral use, and JECFA has reviewed alkylpyrazines as a group without safety concerns at normal use levels. Fragrance use is minor by volume and occurs at low percentages.
