About
A naturally occurring ketone (diacetyl derivative) widely used as a flavour and fragrance ingredient; low toxicity with only minor sensitisation potential at high concentrations.
Acetoin (CAS 513-86-0), also known as 3-hydroxy-2-butanone, is a small aliphatic ketone that occurs naturally in butter, strawberries, and other foods. It is approved as a flavouring substance (FEMA GRAS) and used in cosmetics as a fragrance ingredient and pH buffer component. The compound shows low acute toxicity and is not a significant irritant or sensitiser at typical cosmetic use levels. EU regulation does not impose restrictions on acetoin in cosmetic formulations.
Skin benefits
- Fragrance ingredient — imparts pleasant sensory profile to formulations
- pH buffering — contributes to formulation stability
- Low irritation potential at cosmetic use levels
Known concerns
- Minor fragrance allergen potential at very high concentrations
- Oxidises to diacetyl (butter flavour) on exposure to air — secondary exposure consideration
