About
A recombinant ice-structuring protein from Antarctic ocean pout produced in yeast, analogous to fish antifreeze proteins and used for skin conditioning in cosmetics.
This recombinant protein is identical in sequence to the Type-3 Ice Structuring Protein found in the ocean pout (Zoarces americanus), expressed in Saccharomyces cerevisiae. Ice-structuring proteins (also called antifreeze proteins) are naturally occurring in cold-water fish and have been studied for cryoprotective and membrane-stabilising properties. Saccharomyces expression avoids the endotoxin issues associated with E. coli. The ingredient is not listed in EU restriction annexes and has a favourable safety profile given the natural origin of the source protein and the clean yeast expression platform.
